Squirrel Ribs. Many hunters discard them, but they are every bit as tasty as any other cut of squirrel meat. To eat, simply pull the meat of the bone using your teeth. Our favorite squirrel recipes usually focus around grilling them. We like to brine them for 24 hours, allow the meat to “rest” for awhile, then marinate them for another 24 hours before grilling. Of course, there is also the squirrel hunter’s breakfast recipe, which skips the brine and marinade and, instead, focuses on a post-hunt meal. Read about squirrel hunting.
